In Brazil we call this cut Picanha and it is the most common cut for churrasco. We do keep a nice big fat cap on it, but here in America they take the fat off :-( We grill it and slice thin portions of the cooked meat then return the big piece to the grill and repeat that until the meat is done. Lots of beer and caipirinhas to help digest all that delicious meat!!
